Made from grapes harvested in Valais, it has undergone a meticulous production process to concentrate its aromas as much as possible, which means evaporating two-thirds of the must. The vinegar mother comes from Modena, at a reference for this emblematic region.

Slow, natural alcoholic fermentation, with no added aromatic substances, combined with acetification in oak barrels for eight years, has produced our incomparably rich Balsamic.
