HISTORY

Original to the Rhine Valley, Sylvaner is called Johannisberg in Valais. The second most cultivated white grape variety in the canton, this variety gets its local nickname from Schloss Johannisberg, a Germanic wine castle supposed to have produced the first sweet wines. This selection comes from vines averaging 45 years old grown on the rocky terraces of the Chamoson hillside.

VINIFICATION

Slow, gentle pressing, an initial low-temperature fermentation and six months’ ageing in vats during which malolactic fermentation takes place guarantee maximum fat and roundness while retaining finesse and freshness of flavour.

NEZ

The floral and fruity bouquet hints at fresh hazelnuts, almonds and white fruits.

MOUTH

The palate is characterised by mineral and toasted almond aromas, with a light note of fresh hazelnuts, a hint of pineapple and lovely acidity on the finish.

GASTRONOMIC Pairings

Ideal as an aperitif, Johannisberg goes perfectly with asparagus, fish and soft cheeses.
