The slow maceration of three to four weeks allows the tannins responsible for the colour and structure of this red wine to be gently extracted. A six to eight month ageing in vats during which the second fermentation takes place concludes the production of this speciality.

Supple, suave and ample, the tannins are melted and the finish is full and lingers on the palate. The whole is coated with fruity notes.
Diolinoir pairs perfectly with red meats, grilled meats, pasta, terrines, pizzas and roast poultry.
