A product of Swiss research this recent variety was born from the fertilisation of Rouge de Diolly by Pinot noir pollen Diolinoir is a late 1st period variety. It is mainly planted in Valais where it can ripen perfectly.

VINIFICATION

The slow maceration of three to four weeks allows the tannins responsible for the colour and structure of this red wine to be gently extracted. A six to eight month ageing in vats during which the second fermentation takes place concludes the production of this speciality.

Intense fruity fragrance

FOOT

Supple, suave and ample, the tannins are melted and the finish is full and lingers on the palate. The whole is coated with fruity notes.

GASTRONOMIC Pairings

Diolinoir pairs perfectly with red meats, grilled meats, pasta, terrines, pizzas and roast poultry.
