A blend of red grape varieties from carefully selected vines with meagre yields.

VINIFICATION

The slow 5-week maceration gently extracts the tannins and colour and gives structure to this red wine. The second fermentation, which occurs during this speciality’s 12-month ageing in 400-litre barrels (50% new, 50% 2nd passage), concludes the production of this speciality.

ROBE

NEZ

The intense bouquet is characterised by notes of cocoa and spices mingled with a discreet, elegant vanilla hint.

FLOAT

This rich, voluminous wine develops spicy aromas balanced by magnificent tannins that gain nobility and complexity over time. The long finish hints at some woody and cocoa notes born of careful ageing.

GASTRONOMIC Pairings

Le Chapeau Rouge is a beautiful accompaniment to red meats, rabbit, wild poultry and cheese platters.
