Back

Sweet wines, characterised by their volume on the palate, their smoothness and the complexity of their aromas, require special climatic conditions that only a few Valais terroirs can provide. In favourable years, the presence of Botrytis, a fungus also known as noble rot, can transform excellence into something extraordinary. A great sweet wine that blends the best grapes from plots of Muscat, Sauvignon Blanc and Hermitage.

Vinification

Slow, gentle pressing and a unique low-temperature fermentation guarantee maximum fat and roundness while retaining the finesse and freshness of the aromas. The sugar content of the grapes harvested during the winter is such that fermentation of the sugars into alcohol stops while there are still 60-80 grams of residual sugars—13.6% Vol.
